i have been getting tons of tomatoes from my share from the CSA, Triple J Farm. i know some people wouldnt have any problem taking care of that, but there were starting to stockpile on me and i didnt want to let them go to waste.
i decided the perfect solution to my problem would be making my own tomato sauce. i looked at a few recipes, my pantry, and put it off for two days….and on friday, i finally got to work!
olive oil, onions, garlic, oregano, thyme, basil, flax seed, red and orange peppers, carrots, and even a little nectarine (maybe i got a little carried away)….and of course, the tomatoes. some cherry, some roma, and some regular. some red, some yellow, some orange. it was a bit labor intensive parboiling them and getting rid of the skins on the almost 30 tiny tomatoes.
im glad i got to make it. i had some tonight for the first time and it was actually pretty good. not perfect, but i’d say a valiant and fairly tasty first effort!
